Place a ball of ground beef on the hot griddle, seasoned side down. Use a sturdy spatula to press down firmly on the ball, smashing it flat. Press until you achieve your desired thickness, typically quite thin for a crispy edge.

Season the top of the smashed patty with more salt and pepper. Let it cook for about 2-3 minutes until the edges are golden brown and crispy.

Using the spatula, carefully flip the patty. Immediately place a slice of American cheese on top to allow it to melt.
