Tomato Bruschetta
Ingredients:
- 1 baguette
- Olive oil
- 25 cherry tomatoes
- 1 garlic clove
- 10 basil leaves
- Reduced balsamic vinegar
- Salt
- (Optional) Purple onion
Instructions:

Preheat your oven to 200°C (Turbo setting).

Slice the baguette into rounds of your desired thickness.

Lay the baguette slices on a baking sheet and lightly apply or spray them with olive oil.

Place the oiled baguette slices in the preheated oven and bake for 7-10 minutes, or until they become crispy and lightly golden.

While the baguette slices are baking, prepare the tomato salad. Start by cutting the cherry tomatoes into small pieces.

In a mixing bowl, combine the chopped cherry tomatoes, a tablespoon of olive oil, crushed garlic (you can use a garlic crusher), and crushed basil leaves. The basil leaves can be crushed to release their flavor.

Add a drizzle of reduced balsamic vinegar to the tomato mixture. The amount can be adjusted to your taste.

Season the tomato salad with salt, again adjusting to your preference.

If you like a bit of crunch and extra flavor, you can also add some finely chopped purple onion to the tomato salad.

Once the baguette slices are nicely toasted and crispy, remove them from the oven.

Carefully spoon the tomato salad mixture onto the toasted baguette slices.
