Creamy Mushroom Steak Sandwich

Ingredients:

For the Mushroom Sauce:

2 cups of Bella mushrooms (Baby Bella or Cremini), sliced
3 medium-sized shallots, thinly sliced
1 cup of heavy cream
2 tablespoons of Worcestershire sauce
1/2 cup of red wine
2 tablespoons of all-purpose flour
2 tablespoons of unsalted butter
Salt and pepper, to taste
Fresh herbs such as parsley or thyme
For the Sandwich:

1 Steak (Ribeye, Sirloin, or your favorite cut)
Fresh herbs like thyme and rosemary
Fresh garlic
Smoky Salt and pepper
Multigrain Bread, Ciabatta, or Sourdough (any type will work)
2-3 slices of Raclette cheese
Fresh arugula
Instructions:

For the Mushroom Sauce:

Preparation: Wash and slice the mushrooms and shallots.

In a large skillet, sauté the thinly sliced shallots in oil or butter over medium heat until they become translucent, which should take about 2-3 minutes.

Add the sliced mushrooms, season with salt and pepper, and cook until they turn brown, which should take approximately 5-7 minutes. Stir in the 2 tablespoons of all-purpose flour.

Pour in the red wine, and while gently scraping the pan to incorporate any browned bits, allow the wine to reduce by half, which should take about 3-4 minutes. Add the Worcestershire sauce.

Stir in the heavy cream and allow the sauce to simmer until it thickens, which should take about 3-4 minutes. If the sauce is too thick, you can thin it with a bit more red wine or broth if needed.

Taste the sauce and adjust the seasoning with salt and pepper as necessary. Then, remove it from the heat and stir in fresh herbs like parsley or thyme to enhance the flavor.

For the Sandwich:

Before cooking, allow the steak to sit at room temperature for 20-30 minutes. Season both sides of the steak with smoky salt and pepper.

In a separate skillet, heat oil and butter over medium-high heat. Add fresh herbs and garlic to infuse flavor. Cook the steak for about 3-5 minutes per side, depending on your desired level of doneness. Allow the steak to rest for a few minutes before slicing it against the grain.

Toast slices of multigrain bread until they are golden brown. Butter the toasted bread for added flavor.

Assemble the sandwich by placing the sliced steak on the bread, then layering it with the creamy mushroom sauce, Raclette cheese, and fresh arugula.

Put the sandwich together and press it down gently. You can even melt the cheese slightly by briefly placing it under a broiler or in a hot oven.
