Pepper Chicken Masala
Ingredients:
- 1 chicken, cut into pieces (approximately 3 lbs)
 - 1 tablespoon Ginger Garlic paste
 - 1 tablespoon crushed black pepper (coarse for better texture)
 - 2 tablespoons white vinegar
 - Salt to taste
 - 4-5 green chilies
 - 2 finely chopped onions
 - 1 cup cooking oil
 - 2 cups beaten yogurt, at room temperature
 - 1/4 cup fresh cream or table cream
 - Cilantro for garnish
 
Instructions:
- 
In a large pan or skillet, heat the cooking oil over high heat.
 - 
Add the chicken pieces, ginger garlic paste, 1 teaspoon of black pepper, green chilies, and white vinegar. Fry the chicken for a couple of minutes or until it turns slightly golden.
 - 
Remove the chicken pieces from the pan and set them aside.
 - 
Reduce the amount of oil in the pan, leaving just enough to sauté the onions.
 - 
Add the finely chopped onions to the pan and fry them until they become lightly golden.
 - 
Return the fried chicken pieces to the pan.
 - 
Pour in the beaten yogurt, the remaining black pepper, and add salt to taste. Stir to combine all the ingredients.
 - 
Cook the mixture on high heat for a few minutes, allowing the flavors to meld.
 - 
Add half a cup of water to the pan, cover it, and reduce the heat to low. Allow the chicken to simmer for 10-15 minutes or until it becomes tender.
 - 
Finally, add the fresh cream and mix it well with the chicken and sauce.
 - 
Garnish the Pepper Chicken Masala with fresh cilantro leaves and garam masala powder (optional).
 -
