Chicken Fried Rice Recipe
- 2 cups long-grain white rice
- 2 boneless, skinless chicken breasts, cut into small pieces
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup frozen peas and carrots, thawed
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper, to taste
- 2 green onions, chopped (for garnish)
- Optional: additional vegetables like bell peppers, broccoli, or mushrooms (chopped)
Cook the Rice:
- Begin by cooking the rice according to the package instructions. Once cooked, spread it out on a baking sheet or large plate to cool and allow excess moisture to evaporate. You can even use leftover rice for this recipe.
Prepare the Chicken:
- Season the chicken pieces with a pinch of salt and pepper.
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the chicken and cook until it's no longer pink and has a slight golden color. Remove the chicken from the pan and set it aside.
Scramble the Eggs:
- In the same pan, add a little more oil if needed. Push the chicken to the side of the pan and pour the beaten eggs into the other side. Scramble the eggs until they're cooked but still slightly moist. Once done, mix them with the cooked chicken.
- In the same pan, add the minced garlic and chopped onion. Sauté for a few minutes until they become fragrant and the onions are translucent.
- Add the thawed peas and carrots (and any other optional vegetables) to the pan. Cook for a few minutes until they're heated through and slightly tender.
Combine Rice and Chicken:
- Gently stir the cooked rice into the pan with the vegetables and aromatics. Toss everything together, making sure the rice is well-coated with the ingredients in the pan.
Season with Sauces:
- Drizzle the soy sauce and sesame oil over the rice. Toss everything again to evenly distribute the sauces and give the rice its classic fried rice color.
Return Chicken and Eggs:
- Add the cooked chicken and scrambled eggs back into the pan. Continue to stir-fry for a few minutes until everything is hot and well combined.
- Taste the fried rice and adjust the seasoning with more soy sauce, salt, or pepper if needed.
Garnish and Serve:
- Garnish the chicken fried rice with chopped green onions. Serve hot, and enjoy your homemade chicken fried rice!
