Pepper Chicken Masala

Ingredients:

  • 1 chicken, cut into pieces (approximately 3 lbs)
  • 1 tablespoon Ginger Garlic paste
  • 1 tablespoon crushed black pepper (coarse for better texture)
  • 2 tablespoons white vinegar
  • Salt to taste
  • 4-5 green chilies
  • 2 finely chopped onions
  • 1 cup cooking oil
  • 2 cups beaten yogurt, at room temperature
  • 1/4 cup fresh cream or table cream
  • Cilantro for garnish

Instructions:

  1. In a large pan or skillet, heat the cooking oil over high heat.

  2. Add the chicken pieces, ginger garlic paste, 1 teaspoon of black pepper, green chilies, and white vinegar. Fry the chicken for a couple of minutes or until it turns slightly golden.

  3. Remove the chicken pieces from the pan and set them aside.

  4. Reduce the amount of oil in the pan, leaving just enough to sauté the onions.

  5. Add the finely chopped onions to the pan and fry them until they become lightly golden.

  6. Return the fried chicken pieces to the pan.

  7. Pour in the beaten yogurt, the remaining black pepper, and add salt to taste. Stir to combine all the ingredients.

  8. Cook the mixture on high heat for a few minutes, allowing the flavors to meld.

  9. Add half a cup of water to the pan, cover it, and reduce the heat to low. Allow the chicken to simmer for 10-15 minutes or until it becomes tender.

  10. Finally, add the fresh cream and mix it well with the chicken and sauce.

  11. Garnish the Pepper Chicken Masala with fresh cilantro leaves and garam masala powder (optional).

  12. Serve and enjoy your Pepper Chicken Masala with naan or rice. It's a delightful dish that's sure to please your taste buds!
