Ingredients:

For the Tomato-Garlic Sauce:

  • 4 ripe tomatoes
  • 1 head of garlic
  • Salt and pepper to taste
  • 1 teaspoon of sweet paprika or smoked paprika
  • Fresh thyme leaves
  • 1/2 tablespoon of lemon juice
  • 1 small red onion
  • Fresh cilantro leaves for garnish

For the Flatbread:

  • 1/2 egg
  • 50 grams of sour cream
  • 1 tablespoon of vegetable oil
  • 1 teaspoon of butter
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of sugar
  • 120 grams of all-purpose flour

Instructions:

For the Tomato-Garlic Sauce:

  1. Start by preparing the tomato-garlic sauce (chutney).

  2. Heat a pan over medium heat.

  3. Place the tomatoes in the pan and cook until they become completely soft. If too much juice comes out of them when crushed, allow it to evaporate a bit in the frying pan.

  4. While the tomatoes are cooking, peel and finely mince the garlic and dice the red onion.

  5. Once the tomatoes are soft, add the minced garlic, diced red onion, sweet paprika, and a pinch of salt and pepper to the pan. Cook for a few more minutes until the flavors meld together.

  6. Remove the pan from heat and stir in the fresh thyme leaves and lemon juice. Adjust the seasoning if needed.

  7. Transfer the tomato-garlic sauce to a serving bowl and garnish with fresh cilantro leaves.

For the Flatbread:

  1. While the sauce is simmering, prepare the flatbread dough.

  2. In a mixing bowl, combine the egg, sour cream, vegetable oil, butter, salt, and sugar. Mix well.

  3. Gradually add the flour to the wet ingredients, stirring continuously until a dough forms.

  4. Knead the dough for about 5 minutes until it becomes smooth. Then, cover it with plastic wrap and let it rest for 20 minutes.

  5. Divide the dough into small balls, each weighing about 15 grams.

  6. Take one dough ball at a time and roll it out into a thin flat cake on a floured surface.

  7. Heat a dry, non-stick frying pan over medium-high heat.

  8. Place the rolled-out flatbread in the hot pan and cook on both sides until lightly toasted, about 1-2 minutes per side.

  9. As soon as each flatbread is done, transfer it to a clean kitchen towel or a paper towel and place it in a bag to prevent it from drying out.

  10. Repeat the process with the remaining dough balls.

Serve the warm flatbread alongside the flavorful tomato-garlic sauce for a delightful and savory snack or appetizer. Enjoy!
